Character: A very delicate green tea taste. Special downy leaves are laboriously hand tied into star shapes. The tea is manufactured using a grade known as Fuding Big White Tea Buds. While there are many gardens that produce this tea, the buds from which Star of China is made come from the Rui Yun Tea base, one of the finest gardens in the region. Once the large leaves have been steamed and are still damp, they are hand-stitched into the distinctive 5-pointed star shape. Current annual production of the tea is roughly 6 tons. Keep in mind that each individual star weighs less than a gram - (that's a lot of sewing!) You will appreciate its delicate complexities. Like many white teas, the Star of China can be brewed more than once. With each infusion, notice subtle shifts in its pale yellowy green color & delicate flavor.

Hot Tea: This tea is best enjoyed by pouring boiling water over 1 star for 5 minutes or until fully open. Can be infused repeatedly 2-3 times using higher temperatures & shorter infusions until flavor is exhausted.
Iced Tea: Pour 3 star of china in hot water over 1 1/4 cups freshly boiled water. Steep for 5 minutes. Pour into pitcher add ice and top up with cold water to make a quart of iced tea. Garnish and sweeten to taste.
